Summer Harvest Salad

Ingredients

  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • 2 medium zucchini
  • 1 medium yellow squash
  • 2 ½ cups fresh corn
  • to taste salt
  • to taste black pepper
  • 10 oz grape tomatoes, halved
  • 2 Tbsp fresh lemon juice
  • ¼ cup chopped fresh parsley
  • 2 Tbsp chopped fresh basil ribbons
  • 4 oz feta, crumbled

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add garlic and sauté until light golden and fragrant.
  3. Add zucchini, squash, and corn; season with salt and pepper.
  4. Sauté until just tender crisp.
  5. Remove from heat and toss in tomatoes; let cool slightly.
  6. Pour into a medium salad bowl and toss in lemon juice, parsley, basil, and feta.
  7. Serve immediately.
