Ingredients

The batter

  • 3 medium Bananas, mashed
  • 2 large Eggs
  • 1 cup Sugar
  • ¼ cup Milk
  • 1 tsp Cinnamon
  • ½ tsp Salt
  • tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 cups Flour
  • cup Walnuts, chopped
  • 1 cup Carrots, finely grated

For Topping

  • 1 tsp Sugar
  • ½ tsp Cinnamon

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, mix the mashed bananas, eggs, sugar, and milk.
  3. Add cinnamon, salt, baking powder, and baking soda, and stir to combine.
  4. Gradually mix in the flour, one cup at a time, without overmixing.
  5. Fold in the grated carrots and chopped walnuts.
  6. Pour the batter into an 8x8 inch pan prepared with cooking spray.
  7. Sprinkle sugar and cinnamon on top before baking.
  8. Bake for 35-37 minutes or until a toothpick inserted in the center comes out clean.
