Instructions
- Preheat the oven to 350°F and prepare a bread pan with nonstick spray or parchment paper.
- In a large bowl, whisk together the mashed bananas and eggs.
- Add the melted coconut oil, maple syrup, and vanilla extract, and stir until combined.
- In a medium bowl, mix together the flour, baking soda, salt, cinnamon, and nutmeg.
- Combine the dry ingredients with the wet ingredients and stir until fully mixed.
- Fold in the grated carrots, nuts, and raisins.
- Pour the batter into the prepared bread pan and bake for 45-55 minutes, or until a toothpick inserted comes out clean.
- While the bread is baking, blend together the softened cream cheese and butter until smooth, then mix in the powdered sugar, cinnamon, and vanilla extract.
- Once the loaf is completely cooled, frost the top with the cream cheese frosting.
