Instructions
- Preheat the oven to 350°F and prepare a 9x5 inch loaf pan.
- Grate the carrots and set aside.
- Mix the milk and apple cider vinegar in a small bowl and let it sit.
- In a large bowl, mash the bananas and ensure you have 1 cup.
- Whisk in the sugar, eggs, oil, and vanilla until combined, then stir in the milk mixture.
- Add the all-purpose flour, whole wheat flour, baking soda, salt, and cinnamon, mixing until just combined.
- Fold in the grated carrots and walnuts gently.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes until a knife comes out clean.
- Allow the bread to cool on a wire rack before removing it from the pan.
