Ingredients

The bread

  • ¼ cup milk
  • 1 tsp apple cider vinegar
  • 1 cup very overripe mashed banana
  • ½ cup coconut sugar
  • 2 large eggs
  • cup avocado oil
  • 1 tsp vanilla extract
  • 1 cup all purpose flour
  • ¾ cup whole wheat flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp fine sea salt
  • cup walnuts or pecans, chopped
  • 1 cup freshly shredded carrot

Optional topping

  • 1 serving Healthy Cream Cheese Frosting

Instructions

  1. Preheat the oven to 350°F and prepare a 9x5 inch loaf pan.
  2. Grate the carrots and set aside.
  3. Mix the milk and apple cider vinegar in a small bowl and let it sit.
  4. In a large bowl, mash the bananas and ensure you have 1 cup.
  5. Whisk in the sugar, eggs, oil, and vanilla until combined, then stir in the milk mixture.
  6. Add the all-purpose flour, whole wheat flour, baking soda, salt, and cinnamon, mixing until just combined.
  7. Fold in the grated carrots and walnuts gently.
  8. Pour the batter into the prepared loaf pan and bake for 50-55 minutes until a knife comes out clean.
  9. Allow the bread to cool on a wire rack before removing it from the pan.
