Instructions
- Preheat the oven to 350°F and grease a 5x9 inch loaf pan.
- Mix the ground flax and water in a small bowl and set aside to thicken.
- Melt the coconut oil and let it cool.
- Grate the carrots and set aside.
- In a large bowl, whisk together flour, baking soda, spices, and salt.
- In another bowl, combine mashed banana, grated carrot, sugar, coconut oil, almond milk, vanilla extract, and the flax mixture.
- Pour the wet ingredients into the dry ingredients and mix until just combined, then fold in the pecans.
- Transfer the mixture to the prepared pan and bake for 1 hour and 10 minutes, covering with foil after 50 minutes.
- While the bread is baking, prepare the frosting by beating together cream cheese, powdered sugar, and vanilla until smooth.
- Once baked, cool the bread in the pan for 15 minutes, then remove it and let it cool completely on a wire rack.
- Spread the cream cheese frosting on the cooled bread and top with additional pecans before slicing and serving.
