Ingredients

The bread

  • 2 tbsp ground flax
  • 6 tbsp water
  • ¼ cup coconut oil, melted
  • 1 cup grated carrots
  • 2 cups whole wheat pastry flour
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • 1 tsp cardamom
  • ½ tsp ground ginger
  • ½ tsp allspice
  • ½ tsp sea salt
  • 1 ½ cups mashed banana
  • ½ cup coconut sugar
  • 2 tbsp almond milk
  • 1 tsp vanilla extract
  • cup chopped pecans

The cream cheese frosting

  • cup cream cheese of choice, softened
  • cup organic powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 5x9 inch loaf pan.
  2. Mix the ground flax and water in a small bowl and set aside to thicken.
  3. Melt the coconut oil and let it cool.
  4. Grate the carrots and set aside.
  5. In a large bowl, whisk together flour, baking soda, spices, and salt.
  6. In another bowl, combine mashed banana, grated carrot, sugar, coconut oil, almond milk, vanilla extract, and the flax mixture.
  7. Pour the wet ingredients into the dry ingredients and mix until just combined, then fold in the pecans.
  8. Transfer the mixture to the prepared pan and bake for 1 hour and 10 minutes, covering with foil after 50 minutes.
  9. While the bread is baking, prepare the frosting by beating together cream cheese, powdered sugar, and vanilla until smooth.
  10. Once baked, cool the bread in the pan for 15 minutes, then remove it and let it cool completely on a wire rack.
  11. Spread the cream cheese frosting on the cooled bread and top with additional pecans before slicing and serving.
