Healthy Chocolate Chip Carrot Bread

Ingredients

Wet Ingredients

  • 1 medium banana, mashed
  • 2 large eggs
  • ¼ cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • ½ cup plain, unsweetened almond milk
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • 1.5 cups white whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • teaspoon salt
  • 1.5 cups finely grated carrots, packed
  • ½ cup chopped pecans
  • ½ cup dark chocolate chips

Instructions

  1. Preheat the oven to 350ºF and spray a standard-size loaf pan with cooking spray.
  2. In a mixing bowl, mash the banana and then add the other wet ingredients (except for the coconut oil) and mix well.
  3. In a separate bowl, combine the dry ingredients.
  4. Add the dry ingredients to the wet ingredients and mix until combined, then stir in the melted coconut oil.
  5. Transfer the batter to the bread pan and sprinkle additional chocolate chips on top.
  6. Bake for 38-42 minutes at 350ºF.
  7. Let cool for 5 minutes before removing from the pan.
