Ingredients

  • 3 medium overripe brown bananas, mashed (about 1 cup mashed)
  • ¼ cup coconut or brown sugar

Dry Ingredients

  • cups white whole wheat flour or all-purpose flour
  • teaspoons baking soda
  • ½ teaspoon salt
  • ½-1 cup semi-sweet chocolate chips

Add-ins

  • ½ cup creamy almond butter

Instructions

  1. Preheat the oven to 350°F and grease a 9x5 inch loaf pan, lining it with parchment paper.
  2. In a mixing bowl, combine the maple syrup, Greek yogurt, egg, vanilla, mashed bananas, and sugar until well mixed.
  3. Beat in the flour, baking soda, and salt until just combined.
  4. Stir in the chocolate chips.
  5. Add the almond butter in teaspoon-sized dollops and gently swirl it into the batter.
  6. Pour the batter into the prepared loaf pan and sprinkle with additional chocolate chips if desired.
  7. Bake for 50-60 minutes, or until the center is set, tenting with aluminum foil if the top browns too quickly.
  8. Let cool for at least 30 minutes before cutting.
