Vegan Gluten-Free Chocolate Chip Cookies

Ingredients

  • 1 ¼ cup almond flour
  • ¼ cup vegan dark chocolate chips
  • cup gluten-free flour blend
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • cup organic brown sugar
  • ¼ cup aquafaba
  • 3 Tbsp coconut oil, melted
  • ½ tsp vanilla extract

Instructions

  1. Combine almond flour, chocolate chips, gluten-free flour, baking powder, salt, and brown sugar in a large bowl.
  2. In a separate bowl, whip aquafaba until light and fluffy with loose peaks.
  3. Add melted coconut oil and vanilla to the aquafaba and mix well.
  4. Combine the wet and dry ingredients until just mixed to form a semi-tacky dough.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Scoop out 1½ tablespoon portions of dough and place on the baking sheet, flattening slightly.
  8. Bake for 12-15 minutes until the edges are golden brown.
  9. Let cool on the pan for 5 minutes before transferring to a wire rack.
