Instructions
- Combine almond flour, chocolate chips, gluten-free flour, baking powder, salt, and brown sugar in a large bowl.
- In a separate bowl, whip aquafaba until light and fluffy with loose peaks.
- Add melted coconut oil and vanilla to the aquafaba and mix well.
- Combine the wet and dry ingredients until just mixed to form a semi-tacky dough.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Scoop out 1½ tablespoon portions of dough and place on the baking sheet, flattening slightly.
- Bake for 12-15 minutes until the edges are golden brown.
- Let cool on the pan for 5 minutes before transferring to a wire rack.
