Ingredients

  • 1 tbsp ground flax
  • 3 tbsp water
  • 1 tsp pure vanilla extract
  • ½ cup coconut sugar
  • cup coconut oil, melted
  • 1 ½ cups super fine blanched almond flour
  • ¼ cup coconut flour
  • ¼ tsp salt
  • ¼ tsp baking soda
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flax and water, then let it sit for 5 minutes to gel.
  3. Melt the coconut oil and let it cool slightly.
  4. Add vanilla, coconut sugar, and melted coconut oil to the flax mixture and whisk to combine.
  5. Stir in the almond flour, coconut flour, salt, and baking soda until well mixed; the dough will be soft and mushy.
  6. Fold in the chocolate chips.
  7. Use a cookie scoop to portion about 3 tablespoons of dough onto the cookie sheet, rolling into balls and spacing them 2 inches apart.
  8. If desired, flatten the dough balls slightly for flatter cookies.
  9. Bake for 12-14 minutes, adjusting time for desired gooeyness, then cool on a wire rack.
