Instructions
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- In a large mixing bowl, whisk together the flax and water, then let it sit for 5 minutes to gel.
- Melt the coconut oil and let it cool slightly.
- Add vanilla, coconut sugar, and melted coconut oil to the flax mixture and whisk to combine.
- Stir in the almond flour, coconut flour, salt, and baking soda until well mixed; the dough will be soft and mushy.
- Fold in the chocolate chips.
- Use a cookie scoop to portion about 3 tablespoons of dough onto the cookie sheet, rolling into balls and spacing them 2 inches apart.
- If desired, flatten the dough balls slightly for flatter cookies.
- Bake for 12-14 minutes, adjusting time for desired gooeyness, then cool on a wire rack.
