Vegetarian Irish Stew

Ingredients

The stew

  • 2 tablespoons olive oil
  • 3 large carrots
  • 1 medium yellow onion
  • 8 ounces white mushrooms
  • 3 cloves garlic
  • ¼ cup tomato paste
  • ¼ cup flour
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ¼ teaspoon cracked black pepper
  • 1 bottle Irish stout beer
  • 4 medium gold potatoes
  • 1 cup dry lentils
  • 4 cups vegetable broth

For serving

  • 2 tablespoons chopped fresh parsley
  • to taste fresh bread

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add carrots and onion, cooking until the onion is translucent.
  3. Stir in mushrooms, garlic, and tomato paste, cooking until mushrooms darken.
  4. Add flour and mix until vegetables are coated.
  5. Stir in thyme, salt, and pepper.
  6. Pour in stout beer and deglaze the pot by scraping the bottom.
  7. Add potatoes, lentils, and vegetable broth.
  8. Bring to a boil, then reduce heat and simmer uncovered for 45 minutes until tender.
  9. Adjust seasoning and consistency as needed.
  10. Garnish with parsley and serve with bread.
