Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add carrots and onion, cooking until the onion is translucent.
- Stir in mushrooms, garlic, and tomato paste, cooking until mushrooms darken.
- Add flour and mix until vegetables are coated.
- Stir in thyme, salt, and pepper.
- Pour in stout beer and deglaze the pot by scraping the bottom.
- Add potatoes, lentils, and vegetable broth.
- Bring to a boil, then reduce heat and simmer uncovered for 45 minutes until tender.
- Adjust seasoning and consistency as needed.
- Garnish with parsley and serve with bread.
