Ingredients

The stew

  • 6 slices bacon
  • 2 pounds boneless beef chuck roast
  • 2 tablespoons all-purpose flour
  • 1 large onion
  • 5 medium red potatoes
  • 3 large carrots
  • 3 ribs celery
  • 3 cloves garlic
  • 16 ounces Guinness Extra Stout
  • 2 cups beef broth
  • 4 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon fresh thyme
  • 2 leaves bay leaves
  • 1 cup frozen peas

For serving

  • Mashed potatoes or Colcannon

Instructions

  1. Fry bacon in a Dutch oven until crisp, then remove and reserve the fat.
  2. Pat beef dry, season with salt, and coat with flour.
  3. Brown the beef in batches in the reserved bacon fat.
  4. Cook onions in the empty pot until softened, then add potatoes, carrots, and celery, cooking until softened.
  5. Stir in garlic and cook until fragrant.
  6. Add Guinness and bring to a boil, scraping the bottom of the pot.
  7. Add the browned beef, bacon, beef broth, Worcestershire sauce, tomato paste, thyme, and bay leaves, then bring to a boil.
  8. Reduce heat, cover, and simmer for 2 hours until beef is tender.
  9. Stir in peas, remove bay leaves, and season to taste before serving with mashed potatoes.
