Instructions
- Fry bacon in a Dutch oven until crisp, then remove and reserve the fat.
- Pat beef dry, season with salt, and coat with flour.
- Brown the beef in batches in the reserved bacon fat.
- Cook onions in the empty pot until softened, then add potatoes, carrots, and celery, cooking until softened.
- Stir in garlic and cook until fragrant.
- Add Guinness and bring to a boil, scraping the bottom of the pot.
- Add the browned beef, bacon, beef broth, Worcestershire sauce, tomato paste, thyme, and bay leaves, then bring to a boil.
- Reduce heat, cover, and simmer for 2 hours until beef is tender.
- Stir in peas, remove bay leaves, and season to taste before serving with mashed potatoes.
