Ingredients

  • 2 pounds stew beef
  • 3 slices bacon
  • ¼ cup flour
  • 2 stalks celery
  • 1 medium onion
  • ½ teaspoon minced ginger
  • 1 tablespoon minced garlic
  • 2 bay leaves
  • 2 tablespoons tomato paste
  • 1 teaspoon bouillon powder
  • 1 tablespoon fresh thyme
  • 1 teaspoon smoked paprika
  • 2 cups broth or water
  • 1 cup Guinness or any dark beer
  • 1-2 tablespoons brown sugar
  • 1-2 pounds potatoes
  • 2-3 large carrots
  • 1 cup peas
  • to taste salt and pepper
  • 2-3 green onions

Instructions

  1. Sauté bacon in a large Dutch oven until brown and crisp, then remove and set aside.
  2. Season stew beef with salt and pepper, then brown in the same pot.
  3. Add onion, ginger, garlic, thyme, bay leaves, and celery to the pot and stir until onions are translucent.
  4. Add flour and cook for an additional minute.
  5. Pour in broth or water, then add paprika, tomato paste, bouillon, Guinness, and the browned beef.
  6. Bring to a boil, then after 20 minutes, add potatoes, carrots, and peas.
  7. Cover and cook until potatoes are tender, then garnish with bacon and parsley before serving.
