Instructions
- Sauté bacon in a large Dutch oven until brown and crisp, then remove and set aside.
- Season stew beef with salt and pepper, then brown in the same pot.
- Add onion, ginger, garlic, thyme, bay leaves, and celery to the pot and stir until onions are translucent.
- Add flour and cook for an additional minute.
- Pour in broth or water, then add paprika, tomato paste, bouillon, Guinness, and the browned beef.
- Bring to a boil, then after 20 minutes, add potatoes, carrots, and peas.
- Cover and cook until potatoes are tender, then garnish with bacon and parsley before serving.
