Instructions
- Cut the beef into 1½ - 2 inch chunks and season with salt and pepper.
- Heat olive oil in a pot over high heat and brown the beef on all sides, then remove it from the pot.
- Lower the heat to medium and add garlic, onions, and mushrooms, cooking for 3-4 minutes.
- Add bacon and cook until browned, about 5 minutes.
- Add carrots and celery, cooking for an additional 3-5 minutes.
- Stir in flour and cook for 2-3 minutes to eliminate the raw taste.
- Deglaze the pan with Guinness, scraping up any browned bits.
- Add beef stock and tomato paste, mixing well.
- Return the browned beef to the pot along with potatoes and thyme.
- Cover and simmer for 2 hours, then remove the lid and simmer for an additional 1-2 hours.
- Skim off any fat and adjust seasonings before serving.
