Guinness Beef Stew

Ingredients

  • 2 tablespoon olive oil
  • lb beef chuck
  • 3 cloves garlic
  • 2 cup pearl onions
  • 2 cup mushrooms
  • 6 oz bacon
  • 1 cup carrots
  • 1 cup celery
  • 3 tablespoon all-purpose flour
  • 14.9 oz Guinness Beer
  • 4 tablespoon tomato paste
  • 3 cup beef stock
  • 2 cup baby potatoes
  • 3 sprig thyme
  • ¾ teaspoon sea salt
  • ½ teaspoon black pepper

Instructions

  1. Cut the beef into 1½ - 2 inch chunks and season with salt and pepper.
  2. Heat olive oil in a pot over high heat and brown the beef on all sides, then remove it from the pot.
  3. Lower the heat to medium and add garlic, onions, and mushrooms, cooking for 3-4 minutes.
  4. Add bacon and cook until browned, about 5 minutes.
  5. Add carrots and celery, cooking for an additional 3-5 minutes.
  6. Stir in flour and cook for 2-3 minutes to eliminate the raw taste.
  7. Deglaze the pan with Guinness, scraping up any browned bits.
  8. Add beef stock and tomato paste, mixing well.
  9. Return the browned beef to the pot along with potatoes and thyme.
  10. Cover and simmer for 2 hours, then remove the lid and simmer for an additional 1-2 hours.
  11. Skim off any fat and adjust seasonings before serving.
