Ingredients

  • 2 tablespoons olive oil
  • 3 pounds beef stew meat
  • 1 cup onion, coarsely chopped
  • 1 tablespoon minced garlic
  • ¼ cup all-purpose flour
  • 1 cup Irish stout beer
  • 4 cups beef broth
  • ¼ cup tomato paste
  • 2 pounds small yellow potatoes, halved
  • ½ teaspoon dried thyme leaves
  • 2 cups carrots, peeled, halved and cut into 1 inch pieces
  • to taste salt and pepper
  • 2 tablespoons chopped parsley

Instructions

  1. Preheat the oven to 350°F.
  2. Heat olive oil in a large pot over medium-high heat.
  3. Season the beef with salt and pepper, then brown half of the beef cubes in the pot for 3-4 minutes per side.
  4. Remove the browned beef and repeat with the remaining meat.
  5. Add onions to the pot and cook until tender, then add garlic and cook for an additional 30 seconds.
  6. Return the beef to the pot and add flour, stirring to coat the meat and onions.
  7. Add beer, beef broth, tomato paste, potatoes, thyme, and carrots to the pot, then season with salt and pepper.
  8. Stir to combine and bring to a simmer.
  9. Cover the pot and bake in the oven for 2½ to 3 hours until the meat and vegetables are tender.
  10. Sprinkle with parsley before serving.
