Irish Stew

carrots, peeled, halved and cut into 1 inch pieces

Instructions
- Preheat the oven to 350°F.
- Heat olive oil in a large pot over medium-high heat.
- Season the beef with salt and pepper, then brown half of the beef cubes in the pot for 3-4 minutes per side.
- Remove the browned beef and repeat with the remaining meat.
- Add onions to the pot and cook until tender, then add garlic and cook for an additional 30 seconds.
- Return the beef to the pot and add flour, stirring to coat the meat and onions.
- Add beer, beef broth, tomato paste, potatoes, thyme, and carrots to the pot, then season with salt and pepper.
- Stir to combine and bring to a simmer.
- Cover the pot and bake in the oven for 2½ to 3 hours until the meat and vegetables are tender.
- Sprinkle with parsley before serving.
