Ingredients

The beef and seasoning

  • 2.5-3 lbs. beef chuck roast
  • 1 teaspoon dried rosemary
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon brown sugar
  • 2 teaspoons kosher salt
  • 3 tablespoons all-purpose flour

The vegetables

  • 1 large white onion, chopped
  • 5 cloves garlic, peeled and minced
  • 4 large celery stalks, cut into 1.5-inch chunks
  • 4 large carrots, peeled and cut into 1.5-inch chunks
  • 10 oz. Bella mushrooms, halved

The liquids and other ingredients

  • 15 oz. Guinness beer or any dark beer
  • 1 cup beef broth
  • 1.5 tablespoons Worcestershire sauce
  • 2 tablespoons maple syrup
  • 2 tablespoons tomato paste
  • 10 sprigs fresh thyme, tied in a bundle
  • 3 tablespoons olive oil

Instructions

  1. Cut the beef into 2-2.5-inch chunks and toss with the seasoning mix. Let sit for 30 minutes.
  2. Brown the beef in a Dutch oven over medium-high heat, then set aside.
  3. Deglaze the skillet with beef broth, then sauté the onion, garlic, celery, carrots, and mushrooms.
  4. Add the Guinness, remaining beef broth, Worcestershire sauce, maple syrup, tomato paste, and thyme bundle. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until the beef is tender.
  6. If needed, thicken the stew with additional flour mixed with broth. Serve over mashed potatoes.
