Guinness beer or any dark beer

Instructions
- Cut the beef into 2-2.5-inch chunks and toss with the seasoning mix. Let sit for 30 minutes.
- Brown the beef in a Dutch oven over medium-high heat, then set aside.
- Deglaze the skillet with beef broth, then sauté the onion, garlic, celery, carrots, and mushrooms.
- Add the Guinness, remaining beef broth, Worcestershire sauce, maple syrup, tomato paste, and thyme bundle. Stir well.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours until the beef is tender.
- If needed, thicken the stew with additional flour mixed with broth. Serve over mashed potatoes.
