Kale Grapefruit and Shrimp Salad

Instructions
- Supreme the grapefruits over a bowl to catch the juice and squeeze out the remaining juice from the membranes.
- Blend the grapefruit juice with the other vinaigrette ingredients until smooth.
- Cut the grapefruit supremes into bite-sized pieces and combine with the other salad ingredients in a mixing bowl.
- Add the vinaigrette to the salad and mix well.
- Divide the salad between two plates and serve immediately.
