Oven-Roasted Escarole

Instructions
- Preheat the oven to 400°F and prepare a 9x13-inch glass baking dish.
- Coat the baking dish with ghee or olive oil and place the quartered escarole in a single layer.
- Drizzle the remaining ghee or olive oil over the escarole and season with Sunny Paris seasoning, salt, and pepper.
- Roast the greens in the oven for 15 minutes, then flip them.
- Continue roasting for an additional 8-10 minutes until the escarole has blackened edges.
- Remove from the oven and drizzle with aged balsamic vinegar before serving.
