Oven-Roasted Escarole

Ingredients

The greens

  • 1 large head escarole, cut into quarters

The seasoning and oil

  • 3 tablespoons melted ghee or olive oil
  • 1 tablespoon Sunny Paris seasoning
  • to taste Kosher salt
  • to taste freshly ground pepper
  • to taste aged balsamic vinegar

Instructions

  1. Preheat the oven to 400°F and prepare a 9x13-inch glass baking dish.
  2. Coat the baking dish with ghee or olive oil and place the quartered escarole in a single layer.
  3. Drizzle the remaining ghee or olive oil over the escarole and season with Sunny Paris seasoning, salt, and pepper.
  4. Roast the greens in the oven for 15 minutes, then flip them.
  5. Continue roasting for an additional 8-10 minutes until the escarole has blackened edges.
  6. Remove from the oven and drizzle with aged balsamic vinegar before serving.
