Instructions
- Chop the escarole and soak it in cold water if dirty, then drain.
- Heat olive oil, garlic, and red pepper flakes in a skillet over medium heat until sizzling.
- Add the escarole to the skillet, increase heat to medium-high, and season with salt.
- Use tongs to rearrange the greens until wilted, about 1-2 minutes.
- Remove from heat, let cool briefly, and adjust salt to taste.
