Ingredients

The greens

  • 1 head escarole

The aromatics

  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 pinch crushed red pepper flakes
  • to taste none kosher salt

Instructions

  1. Chop the escarole and soak it in cold water if dirty, then drain.
  2. Heat olive oil, garlic, and red pepper flakes in a skillet over medium heat until sizzling.
  3. Add the escarole to the skillet, increase heat to medium-high, and season with salt.
  4. Use tongs to rearrange the greens until wilted, about 1-2 minutes.
  5. Remove from heat, let cool briefly, and adjust salt to taste.
