Simple Sautéed Greens

Ingredients

The greens

  • 2 bunches greens (kale, chard, collards, etc.)

The aromatics

  • 1 medium shallot
  • 3 medium garlic cloves

The seasoning

  • 4 tablespoons olive oil
  • ½ teaspoon lemon zest
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon sea salt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Trim the stalks and ribs from the greens and chop them into ¼ inch slices.
  2. Sauté the chopped stalks in a large pan with 1 tablespoon of olive oil for about 5 minutes.
  3. Cut the destemmed greens into ribbons.
  4. Add the remaining olive oil to the pan, sauté the shallots for 3 minutes, then add garlic and red pepper flakes.
  5. Add the greens to the pan, reduce heat, and stir occasionally for 8-10 minutes until wilted.
  6. Add the sautéed stems back into the pan, then mix in lemon zest, salt, and lemon juice before serving.
