Ingredients

The greens

  • 1 large bunch (about 10 ounces) collard greens

The cooking ingredients

  • 1 ½ tablespoons extra-virgin olive oil
  • ¼ teaspoon fine sea salt
  • 2 medium cloves garlic
  • pinch red pepper flakes (optional)
  • a couple lemon wedges, for serving

Instructions

  1. Prepare the collards by removing the thick center rib and slicing the leaves into thin strips.
  2. Heat a large skillet over medium-high heat and add the olive oil.
  3. Add the collard greens and salt, stirring to coat them in oil.
  4. Cook the greens in 30-second intervals, stirring until they are wilted and some edges are browned.
  5. Add garlic and red pepper flakes, cooking until fragrant.
  6. Serve the collards on plates with lemon wedges.
