The greens

  • 1 large bunch collard greens

The sauté

  • 1 slice bacon
  • 1 tbsp olive oil
  • 3 cloves garlic
  • to taste salt

Instructions

  1. Remove the tough stems from the collard greens.
  2. Stack a few leaves, roll them up, and slice into thin strips.
  3. In a large sauté pan, heat the bacon on low heat until the fat renders.
  4. Add olive oil and garlic to the pan, sauté until golden.
  5. Add the chopped collards to the pan, season with salt, and cover.
  6. Cook until the leaves are tender, stirring occasionally.
