Instructions
- Remove the center ribs from the collard greens and cut the leaves into small strips.
- Place the greens in a large sauté pan with 2-3 tablespoons of water, cover, and cook until wilted.
- Transfer the wilted greens to a plate and wipe the skillet dry.
- Cook the bacon in the same pan until browned, then drain on paper towels, leaving the grease.
- Add the diced onion to the bacon grease and cook until soft.
- Return the collard greens to the pan, adding vinegar, maple syrup, red pepper, and water.
- Simmer until the liquid reduces, then stir in the chopped bacon and season with salt.
