Ingredients

The greens

  • 1 bunch collard greens

The flavorings

  • 4 slices bacon
  • 1 small onion (diced)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon pure maple syrup
  • teaspoon crushed red pepper (optional)
  • to taste salt

Instructions

  1. Remove the center ribs from the collard greens and cut the leaves into small strips.
  2. Place the greens in a large sauté pan with 2-3 tablespoons of water, cover, and cook until wilted.
  3. Transfer the wilted greens to a plate and wipe the skillet dry.
  4. Cook the bacon in the same pan until browned, then drain on paper towels, leaving the grease.
  5. Add the diced onion to the bacon grease and cook until soft.
  6. Return the collard greens to the pan, adding vinegar, maple syrup, red pepper, and water.
  7. Simmer until the liquid reduces, then stir in the chopped bacon and season with salt.
