Collard Greens with Bacon

Instructions
- Cook the bacon in a large pot over medium-high heat until crisp, then reserve half for garnish.
- Add the onion to the bacon grease and cook until softened.
- Stir in the garlic, salt, and pepper, and cook briefly.
- Add the collard greens and cook until wilted.
- Pour in the chicken broth and bring to a simmer.
- Cover and simmer on low for 30-35 minutes until the greens are tender.
- Uncover, stir in hot sauce and vinegar, and cook for an additional 5 minutes.
- Garnish with reserved bacon and serve.
