The bacon and aromatics

The liquids

Instructions
- Boil 2 quarts of water with 1½ teaspoons of salt in a large pot.
- Add collard greens and cook until tender for about 10 minutes, then drain and rinse.
- Squeeze excess water from the collards using a kitchen towel.
- In a skillet, cook bacon until crisp and reserve the fat.
- Add onion to the skillet and cook until softened, then add garlic and red pepper flakes.
- Stir in the collard greens, coating them with the bacon fat, then add broth and cover.
- Cook until heated through, then simmer uncovered until the liquid thickens.
- Remove from heat and top with vinegar and bacon, seasoning to taste.
