Collard Greens

Ingredients

The greens

  • 2 pounds collard greens
  • teaspoons salt
  • to taste freshly ground black pepper

The bacon and aromatics

  • 2 ounces bacon
  • ½ onion finely chopped
  • 2 cloves garlic
  • ¼ teaspoon red chili flakes

The liquids

  • ¼ cup chicken broth
  • 2 teaspoons apple cider vinegar
  • as needed vegetable oil

Instructions

  1. Boil 2 quarts of water with 1½ teaspoons of salt in a large pot.
  2. Add collard greens and cook until tender for about 10 minutes, then drain and rinse.
  3. Squeeze excess water from the collards using a kitchen towel.
  4. In a skillet, cook bacon until crisp and reserve the fat.
  5. Add onion to the skillet and cook until softened, then add garlic and red pepper flakes.
  6. Stir in the collard greens, coating them with the bacon fat, then add broth and cover.
  7. Cook until heated through, then simmer uncovered until the liquid thickens.
  8. Remove from heat and top with vinegar and bacon, seasoning to taste.
