Ingredients

The greens

  • 2 large bundles collard greens
  • 3 cloves garlic

The seasoning

  • 1 heaping Tbsp coconut oil
  • 1 healthy pinch salt
  • 1 healthy pinch pepper
  • 3 Tbsp Coconut Bacon
  • 3-6 Tbsp vegetable broth
  • 1-2 tsp coconut sugar
  • ¼ tsp red pepper flake
  • 2 Tbsp fresh lemon juice

Instructions

  1. Heat a skillet over medium heat and add coconut oil and minced garlic, sautéing until fragrant.
  2. Add collard greens along with salt and pepper, stirring and covering for a few minutes until bright green.
  3. Incorporate coconut bacon, vegetable broth, coconut sugar, and red pepper flake, then cover and simmer.
  4. Adjust cooking time based on desired tenderness, adding more vegetable broth if needed.
  5. Taste and adjust seasonings before serving, optionally adding lemon juice.
