Coconut Curried Greens

Instructions
- Heat a large skillet over medium heat and add coconut oil, shallot, garlic, and ginger. Sauté until tender.
- Add collard greens, half of the curry powder, coconut sugar, and a pinch of sea salt. Stir and reduce heat to medium-low, cooking until greens are tender.
- Incorporate kale, another pinch of sea salt, remaining curry powder, and coconut milk. Stir and cover to steam until kale is tender.
- Taste and adjust seasoning with salt, coconut sugar, or curry powder as needed.
- Serve immediately, optionally topped with toasted coconut flakes.
