Ingredients

The greens

  • 2 Tbsp coconut oil
  • 2 medium shallots (sliced)
  • 3 cloves garlic (minced)
  • 1 tsp minced ginger
  • 1 large bundle collard greens (large stems removed, chopped)
  • 2 tsp curry powder (divided)
  • 2 tsp coconut sugar
  • to taste sea salt
  • 1 large bundle kale (large stems removed, chopped)
  • ½ cup light coconut milk

For serving

  • to taste toasted coconut flakes (optional)

Instructions

  1. Heat a large skillet over medium heat and add coconut oil, shallot, garlic, and ginger. Sauté until tender.
  2. Add collard greens, half of the curry powder, coconut sugar, and a pinch of sea salt. Stir and reduce heat to medium-low, cooking until greens are tender.
  3. Incorporate kale, another pinch of sea salt, remaining curry powder, and coconut milk. Stir and cover to steam until kale is tender.
  4. Taste and adjust seasoning with salt, coconut sugar, or curry powder as needed.
  5. Serve immediately, optionally topped with toasted coconut flakes.
