Instructions
- Prepare the vegetable stock with spices in a saucepan and bring to a boil.
- Add rice and lentils, then cover and simmer for 40-45 minutes until cooked.
- In a separate pan, caramelize sliced onions in olive oil for about 30 minutes.
- Remove 2/3 of the onions for topping and fry the remaining onions until crispy.
- Combine the cooked rice and lentils with caramelized onions, mint, pine nuts, and lemon zest and juice.
- Serve warm with Greek yogurt and garnish with crispy onions.
