Brown Rice Mujadara

Ingredients

The base

  • 5 cups vegetable stock
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 leaf bay leaf
  • 1 cup brown basmati rice
  • 1 cup brown or green lentils

The toppings

  • 2 tablespoons olive oil
  • 3 medium yellow onions
  • ½ cup chopped fresh mint
  • ½ cup toasted pine nuts
  • 1 fresh lemon
  • to taste Greek yogurt

Instructions

  1. Prepare the vegetable stock with spices in a saucepan and bring to a boil.
  2. Add rice and lentils, then cover and simmer for 40-45 minutes until cooked.
  3. In a separate pan, caramelize sliced onions in olive oil for about 30 minutes.
  4. Remove 2/3 of the onions for topping and fry the remaining onions until crispy.
  5. Combine the cooked rice and lentils with caramelized onions, mint, pine nuts, and lemon zest and juice.
  6. Serve warm with Greek yogurt and garnish with crispy onions.
