Ingredients

The base

  • 1 cup large brown lentils
  • 1 cup brown basmati rice
  • 3 cups water

The aromatics and spices

  • tablespoons olive oil
  • 2-3 fat shallots (or 1 red onion)
  • 4 cloves garlic
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon allspice
  • ½ teaspoon cinnamon
  • ½ teaspoon turmeric (optional)
  • ¼ teaspoon ground ginger
  • teaspoons kosher salt
  • 1 teaspoon dried mint or parsley (or 1 tablespoon fresh)
  • 1 small lemon zest

Instructions

  1. Soak lentils in hot water until ready to use.
  2. Sauté shallots in olive oil until tender and caramelized, then remove half for topping.
  3. Add garlic and sauté until fragrant, then add spices, salt, lemon zest, and water.
  4. Drain lentils and add to the pot with rinsed rice, stir well.
  5. Cover and cook on high pressure for 11 minutes, then let naturally release for 10 minutes.
  6. Fluff the Mujadara with a fork and serve with desired garnishes.
