Instructions
- Heat oil in a deep fryer or cast-iron skillet to 375°F (190°C).
- In a large bowl, mix flour, nutmeg, baking soda, and sugar.
- Make a well in the mixture and add eggs, ricotta cheese, vanilla extract, and salt.
- Stir until the dough is thick and well combined.
- Scoop the dough and drop it into the hot oil, shaping it into balls.
- Fry for about 2 minutes on one side, then flip and fry for another 2-3 minutes until golden brown.
- Remove from oil and drain on paper towels.
- Sprinkle with powdered sugar if desired and serve warm.
