Ingredients

The dough

  • 1 cup all-purpose flour
  • ¼ teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • 3 tablespoons sugar
  • 2 large eggs
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 pinch salt

For frying

  • powdered sugar for dusting
  • vegetable oil for frying

Instructions

  1. Heat oil in a deep fryer or cast-iron skillet to 375°F (190°C).
  2. In a large bowl, mix flour, nutmeg, baking soda, and sugar.
  3. Make a well in the mixture and add eggs, ricotta cheese, vanilla extract, and salt.
  4. Stir until the dough is thick and well combined.
  5. Scoop the dough and drop it into the hot oil, shaping it into balls.
  6. Fry for about 2 minutes on one side, then flip and fry for another 2-3 minutes until golden brown.
  7. Remove from oil and drain on paper towels.
  8. Sprinkle with powdered sugar if desired and serve warm.
