Instructions
- Whip the heavy cream until stiff peaks form.
- Combine ricotta, powdered sugar, and vanilla in a bowl and fold in the whipped cream. Refrigerate.
- Preheat the pizzelle iron and coat it with nonstick spray.
- Mix flour, sugar, butter, eggs, vanilla, and baking powder in a bowl.
- Drop rounded tablespoons of batter onto the pizzelle iron and bake until golden brown.
- Remove one pizzelle and wrap it around a wooden dowel to shape it into a tube.
- Repeat with the remaining batter.
- Fold chocolate chips into the ricotta filling.
- Pipe the filling into each cooled pizzelle and garnish as desired.
