Ingredients

The Salad

  • 1 head kale
  • 1 cup chopped carrots
  • 1 ½ cups chopped cucumber
  • 1 cup radishes
  • 1 yellow pepper sliced
  • ¼ cup peanuts

The Dressing

  • ¼ cup natural peanut butter
  • 1 clove crushed garlic
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
  • 2 tbsp honey
  • 1 pinch red pepper flakes
  • 1 tbsp lime juice
  • 2 tbsp hot water

Instructions

  1. Slice the kale into thin ribbons.
  2. Toss the kale with the chopped carrots, cucumber, radishes, yellow pepper, and peanuts.
  3. In a small bowl, combine the peanut butter, garlic, ginger, soy sauce, honey, red pepper flakes, lime juice, and hot water.
  4. Whisk the dressing until well combined, adding more hot water if needed to thin it out.
  5. Pour the dressing over the salad and toss to combine.
