Instructions
- Slice the kale into thin ribbons.
- Toss the kale with the chopped carrots, cucumber, radishes, yellow pepper, and peanuts.
- In a small bowl, combine the peanut butter, garlic, ginger, soy sauce, honey, red pepper flakes, lime juice, and hot water.
- Whisk the dressing until well combined, adding more hot water if needed to thin it out.
- Pour the dressing over the salad and toss to combine.
