Ingredients

The salad

  • 1 bunch kale
  • to taste none fine-grain sea salt
  • 1 cup chopped snow peas
  • 1 large carrot
  • 1 small red bell pepper
  • 1 heaping cup organic edamame
  • 1 none avocado
  • 1 large shallot
  • handful none cilantro
  • handful none Thai basil

Tamari-Ginger Vinaigrette

  • ΒΌ cup olive oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon finely grated ginger
  • 1 tablespoon low-sodium tamari
  • 2 teaspoons lime juice
  • 3 cloves garlic

Instructions

  1. Remove the tough ribs from the kale and chop the leaves into small pieces.
  2. Massage the kale with a dash of sea salt until it becomes darker and fragrant.
  3. Prepare the vinaigrette by whisking together all the vinaigrette ingredients until emulsified.
  4. Toss the vinaigrette with the kale and add the remaining salad ingredients.
  5. Serve immediately.
