Ingredients

The salad

  • 6 cups chopped kale
  • 1 cup edamame
  • 1 cup thinly sliced red cabbage
  • 1 cup thinly sliced carrots
  • ¼ cup thinly sliced red bell pepper
  • ¼ cup thinly sliced yellow bell pepper
  • 1 whole avocado
  • cup roughly chopped cilantro
  • to taste sea salt
  • optional sesame seeds for garnish

The dressing

  • to taste Newman's Own Sesame Ginger Dressing

Instructions

  1. 1. Massage the chopped kale with a dash of sea salt until it becomes a darker green.
  2. 2. Add edamame, red cabbage, carrots, red and yellow bell peppers, avocado, and cilantro on top of the kale.
  3. 3. Garnish with sesame seeds if desired.
  4. 4. Drizzle dressing over the salad and serve immediately.
