Ingredients

The Dressing

  • ½ avocado ripe avocado
  • ¼ cup Tessemae’s Creamy Caesar Dressing
  • ½ lemon Juice of

The Salad

  • 1 bunch kale (curly green kale works best)
  • 1 pinch sea salt
  • ½ cup shredded carrots
  • ¼ cup thinly sliced red onion
  • 1 cup cherry tomatoes, halved
  • 1 egg hard boiled egg, halved
  • 2 Tbsp. sliced almonds

Instructions

  1. Blend avocado, dressing, and lemon juice until smooth and set aside.
  2. Tear kale into small pieces and place in a large bowl with a pinch of sea salt.
  3. Massage the kale leaves with salt until they wilt and soften.
  4. Divide the kale among two bowls and add carrots, red onion, cherry tomatoes, and eggs.
  5. Drizzle with dressing, toss lightly to coat, and sprinkle with almonds before serving.
