Instructions
- Blend avocado, dressing, and lemon juice until smooth and set aside.
- Tear kale into small pieces and place in a large bowl with a pinch of sea salt.
- Massage the kale leaves with salt until they wilt and soften.
- Divide the kale among two bowls and add carrots, red onion, cherry tomatoes, and eggs.
- Drizzle with dressing, toss lightly to coat, and sprinkle with almonds before serving.
