Classic Vegan Pumpkin Pudding

Ingredients

  • 2 cups soy milk or non-dairy milk of choice
  • cups pumpkin puree
  • ½ cup organic brown sugar
  • 4 tablespoons corn starch
  • ½ teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • teaspoons ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice (optional)

Instructions

  1. Mix corn starch and brown sugar in a saucepan.
  2. Add 1 tablespoon of soy milk to form a paste.
  3. Heat the saucepan over medium heat and slowly whisk in the remaining milk.
  4. Add the pumpkin puree and bring the mixture to a boil, stirring constantly.
  5. Reduce to a simmer and stir until thickened.
  6. Remove from heat and mix in vanilla extract, maple syrup, cinnamon, nutmeg, and allspice.
  7. Cool in the fridge before serving.
