Creamy Vegan Rice Pudding

Instructions
- Prepare cooked white rice if not already done.
- In a medium saucepan, whisk together dairy-free milk, maple syrup, cornstarch, and sea salt.
- Add the cooked rice to the saucepan and stir well.
- Heat over medium heat, stirring occasionally, for about 13-16 minutes until the rice absorbs most of the liquid.
- Add light coconut milk and vanilla extract, stirring constantly for 2-4 minutes until thickened.
- Remove from heat and let cool slightly before serving warm or cover to chill in the refrigerator for 30 minutes to 1 hour.
- Serve warm with optional toppings like cinnamon and raisins or enjoy chilled.
