Ingredients

The pudding

  • 1 ½ cups cooked white rice
  • 1 ½ cups dairy-free milk
  • ¼ cup maple syrup
  • 2 tsp cornstarch
  • tsp sea salt
  • ½ cup canned light coconut milk
  • 1 tsp vanilla extract

For serving (optional)

  • to taste cinnamon
  • to taste raisins

Instructions

  1. Prepare cooked white rice if not already done.
  2. In a medium saucepan, whisk together dairy-free milk, maple syrup, cornstarch, and sea salt.
  3. Add the cooked rice to the saucepan and stir well.
  4. Heat over medium heat, stirring occasionally, for about 13-16 minutes until the rice absorbs most of the liquid.
  5. Add light coconut milk and vanilla extract, stirring constantly for 2-4 minutes until thickened.
  6. Remove from heat and let cool slightly before serving warm or cover to chill in the refrigerator for 30 minutes to 1 hour.
  7. Serve warm with optional toppings like cinnamon and raisins or enjoy chilled.
