Ingredients

The pudding

  • cups milk
  • cups coconut milk
  • ¼ teaspoon salt
  • ½ cup rice, uncooked (basmati)
  • ¼ cup granulated white sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ¼-½ teaspoon cardamom (optional)
  • ½ cup raisins

For garnish

  • to taste pineapple or mango, chopped

Instructions

  1. Combine milk, coconut milk, rice, and salt in a saucepan and bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 12-15 minutes until rice is tender.
  3. Stir gently to prevent sticking and burning.
  4. Remove from heat and add sugar, vanilla extract, nutmeg, cinnamon, and cardamom.
  5. Return to heat and cook until desired thickness is reached, then stir in raisins.
  6. Serve warm with chopped pineapple or mango, or chill until ready to eat.
