Rice Pudding

Ingredients

The pudding

  • 3 ¼ cups whole milk
  • 3 ½ Tbsp granulated sugar
  • ½ cup long grain white rice
  • ¼ tsp ground cinnamon
  • ¼ tsp salt
  • 1 tsp vanilla extract

Optional ingredients

  • ¼ cup brown or golden raisins

Instructions

  1. Whisk together milk, sugar, rice, salt, and cinnamon in a medium non-stick saucepan.
  2. Bring the mixture to a simmer over medium heat, then reduce to low and let it simmer uncovered until the rice is tender and the mixture thickens, stirring frequently for about 30 to 35 minutes.
  3. Remove from heat, stir in raisins and vanilla, and let rest for a few minutes before serving. Dust servings with additional cinnamon if desired.
