Instructions
- Combine 5 ½ cups of milk, sugar, cinnamon stick, and salt in a large saucepan over medium heat.
- Bring the mixture to a boil.
- Add the uncooked rice to the milk mixture and reduce the heat to low.
- Cook the rice mixture at a gentle simmer for 45-60 minutes, stirring frequently.
- Once thickened to a Greek yogurt consistency, remove from heat and stir in the vanilla extract and raisins.
- Allow to cool and adjust consistency with additional milk or heavy cream if desired.
- Serve sprinkled with cinnamon and topped with whipped cream.
