Old Fashioned Rice Pudding

Ingredients

The pudding

  • 6 cups whole milk
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • ½ cup long grain white rice
  • 1 tablespoon vanilla extract
  • 1 stick cinnamon
  • cup golden raisins

For serving

  • to taste cinnamon powder
  • to taste whipped cream

Instructions

  1. Combine 5 ½ cups of milk, sugar, cinnamon stick, and salt in a large saucepan over medium heat.
  2. Bring the mixture to a boil.
  3. Add the uncooked rice to the milk mixture and reduce the heat to low.
  4. Cook the rice mixture at a gentle simmer for 45-60 minutes, stirring frequently.
  5. Once thickened to a Greek yogurt consistency, remove from heat and stir in the vanilla extract and raisins.
  6. Allow to cool and adjust consistency with additional milk or heavy cream if desired.
  7. Serve sprinkled with cinnamon and topped with whipped cream.
