Instructions
- Slice the beef thinly and chop the onion.
- Heat olive oil in a frying pan over medium heat and add the chopped onion.
- Cook the onion for a couple of minutes until translucent, then add the beef and cook until it changes color.
- Add water to the pan and bring it to a boil, removing any scum that forms.
- Stir in the udon soup packet and curry roux, then turn off the heat once the roux has dissolved and the soup thickens.
- In a separate pot, boil water and cook the udon noodles according to package instructions, typically for one minute.
- Drain the noodles and serve half in a bowl, topped with half of the curry soup and garnished with chopped scallions.
