Curry Udon

Ingredients

The noodles and broth

  • 2 packets frozen udon noodles
  • 1 packet Udon soup
  • 2 cups water

The protein and vegetables

  • 150 g thinly sliced beef
  • ½ onion onion
  • 1 tbsp olive oil
  • 2 pieces curry roux
  • 1 chopped scallion (for garnish)

Instructions

  1. Slice the beef thinly and chop the onion.
  2. Heat olive oil in a frying pan over medium heat and add the chopped onion.
  3. Cook the onion for a couple of minutes until translucent, then add the beef and cook until it changes color.
  4. Add water to the pan and bring it to a boil, removing any scum that forms.
  5. Stir in the udon soup packet and curry roux, then turn off the heat once the roux has dissolved and the soup thickens.
  6. In a separate pot, boil water and cook the udon noodles according to package instructions, typically for one minute.
  7. Drain the noodles and serve half in a bowl, topped with half of the curry soup and garnished with chopped scallions.
