Instant Pot Stuffed Peppers

Instructions
- Place the trivet in the Instant Pot and add water based on the size of the pot.
- Trim the tops of the bell peppers and remove the seeds and ribs.
- Salt the insides of the peppers and place them on the trivet.
- In a bowl, mix the ground beef, Italian seasoning, salt, garlic, tomato sauce, and diced tomatoes.
- Add the cooked rice and 1 cup of shredded cheese to the mixture and combine gently.
- Stuff the mixture into the bell peppers.
- Secure the lid on the Instant Pot and set it to Manual High Pressure for 9 minutes.
- After cooking, perform a quick release of the pressure.
- Remove the lid and sprinkle the remaining cheese on top of the peppers.
- Replace the lid to allow the cheese to melt, then carefully remove the peppers and garnish with parsley.
