Instant Pot Stuffed Peppers

Ingredients

The filling

  • ½ pound lean ground beef
  • 1 teaspoon salt
  • teaspoons Italian seasoning
  • 2 cloves garlic
  • 1 8-ounce can tomato sauce
  • 1 14-ounce can diced tomatoes
  • 1 cup cooked rice
  • cups shredded cheese

The peppers

  • 4 large bell peppers

For cooking

  • 1 cup water

For garnish

  • to taste fresh parsley

Instructions

  1. Place the trivet in the Instant Pot and add water based on the size of the pot.
  2. Trim the tops of the bell peppers and remove the seeds and ribs.
  3. Salt the insides of the peppers and place them on the trivet.
  4. In a bowl, mix the ground beef, Italian seasoning, salt, garlic, tomato sauce, and diced tomatoes.
  5. Add the cooked rice and 1 cup of shredded cheese to the mixture and combine gently.
  6. Stuff the mixture into the bell peppers.
  7. Secure the lid on the Instant Pot and set it to Manual High Pressure for 9 minutes.
  8. After cooking, perform a quick release of the pressure.
  9. Remove the lid and sprinkle the remaining cheese on top of the peppers.
  10. Replace the lid to allow the cheese to melt, then carefully remove the peppers and garnish with parsley.
