Ingredients

The marinade

  • ½ cup avocado oil
  • 1 large lemon (juice and zest)
  • ½ cup packed parsley leaves
  • 1 ¼ teaspoons salt
  • ½ teaspoon black pepper

The chicken

  • 24 ounces boneless skinless chicken breast

Optional garnishes

  • to taste crushed red pepper flakes
  • to taste Maldon sea salt
  • to taste parsley

Instructions

  1. Combine the avocado oil, lemon juice and zest, parsley, salt, and pepper in a blender and process for 1 minute.
  2. Place the chicken in a shallow dish or zip-top bag and pour all but ¼ cup of the marinade over the chicken, tossing to coat.
  3. Reserve the remaining marinade and marinate the chicken for at least 30 minutes or up to 4 hours.
  4. Drain the marinade from the chicken.
  5. Preheat the Ninja Foodi Grill to medium heat using the grill setting and set the timer for 16 minutes.
  6. When notified to add food, place the chicken on the grill.
  7. Cook for 8 minutes, then flip the chicken and brush with the reserved marinade.
  8. Cook for another 8 minutes or until the internal temperature reaches 160°F.
  9. Allow the chicken to rest for 5 to 10 minutes before serving.
