Quick Marinated Grilled Chipotle Chicken

Ingredients

The marinade

  • cup avocado oil
  • 3 tablespoons lime juice
  • 1 chipotle chili in adobo sauce, chopped
  • 1 tablespoon adobo sauce
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • ½ teaspoon fresh ground black pepper

The chicken

  • 16 ounces boneless chicken breast

Instructions

  1. Whisk together the marinade ingredients in a bowl.
  2. Place the chicken in a shallow dish or zip-top bag and pour the marinade over it, reserving 3 tablespoons.
  3. Marinate the chicken at room temperature for 30 minutes or in the refrigerator for up to four hours.
  4. Preheat the Ninja Foodi Grill to medium heat for 16 minutes.
  5. Add the chicken to the grill in a single layer and cook for 8 minutes.
  6. Flip the chicken, brush with reserved marinade, and cook for another 8 minutes until the internal temperature reaches 160°F.
  7. Allow the chicken to rest for 5 to 10 minutes before serving.
