Grilled Chipotle Chicken

Ingredients

The chicken

  • 2 lbs chicken thighs or breasts (boneless, skinless)

The marinade

  • ¼ cup olive oil
  • 2 pieces chipotle peppers (canned)
  • 2 tablespoons adobo sauce (juice from can)
  • 4 cloves garlic
  • 1 piece shallot
  • tablespoons cumin
  • 1 tablespoon coriander
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 2 teaspoons salt

For garnish

  • to taste lime juice
  • to taste cilantro

Instructions

  1. Preheat the grill to medium-high.
  2. Blend marinade ingredients into a paste using a food processor.
  3. Combine chicken and marinade in a ziplock bag and massage to coat well; marinate for at least 20 minutes or up to 3 days.
  4. Grill chicken for 6-7 minutes on each side until grill marks appear.
  5. Lower the heat and move chicken to a cooler part of the grill; cook until internal temperature reaches 165°F.
  6. Let the chicken rest for 5-10 minutes before serving and squeeze with lime juice.
