Chipotle Apricot Grilled Chicken Thighs

Ingredients

The chicken

  • 3 lbs. bone-in chicken thighs

The glaze

  • 11 oz. apricot preserves
  • 1 tablespoon diced chipotle peppers in adobo sauce
  • ½ teaspoon smoked paprika
  • teaspoon salt
  • ¼ cup water

Instructions

  1. Combine apricot preserves, chipotle peppers, smoked paprika, salt, and water in a bowl and whisk until smooth. Set aside ¼ cup of the mixture.
  2. Add chicken thighs to the bowl and coat with the marinade. Cover and marinate for 20-30 minutes.
  3. Preheat the grill to medium-high heat (375-400°F).
  4. Place chicken on the grill, skin side down. Grill for 4 minutes, then turn 45 degrees and grill for another 4 minutes.
  5. Flip the chicken and repeat the grilling process.
  6. Move chicken away from direct heat and continue grilling until the internal temperature reaches 165°F, which may take an additional 5-10 minutes.
  7. Remove from the grill and brush with the reserved chipotle apricot glaze.
