Chipotle Apricot Grilled Chicken Thighs

Instructions
- Combine apricot preserves, chipotle peppers, smoked paprika, salt, and water in a bowl and whisk until smooth. Set aside ¼ cup of the mixture.
- Add chicken thighs to the bowl and coat with the marinade. Cover and marinate for 20-30 minutes.
- Preheat the grill to medium-high heat (375-400°F).
- Place chicken on the grill, skin side down. Grill for 4 minutes, then turn 45 degrees and grill for another 4 minutes.
- Flip the chicken and repeat the grilling process.
- Move chicken away from direct heat and continue grilling until the internal temperature reaches 165°F, which may take an additional 5-10 minutes.
- Remove from the grill and brush with the reserved chipotle apricot glaze.
