Ingredients

The chicken

  • 2 lb boneless skinless chicken thighs

The chimichurri sauce

  • 2 cups fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 4 tablespoons red wine vinegar
  • 2 tablespoons lime juice
  • 6 tablespoons olive oil
  • ½ teaspoon smoked paprika
  • ¾ teaspoon red pepper flakes
  • ½ teaspoon salt

Instructions

  1. Make the chimichurri by mixing cilantro, garlic, red wine vinegar, lime juice, olive oil, smoked paprika, red pepper flakes, and salt in a bowl.
  2. Marinate the chicken thighs in half of the chimichurri sauce for at least 30 minutes.
  3. Preheat the grill to medium heat (325°F-350°F) and grill the chicken thighs for 4-5 minutes on each side until they reach an internal temperature of 165°F.
  4. Let the chicken rest for 5 minutes before serving with the remaining chimichurri sauce.
