Chimichurri Chicken Thighs

The chimichurri sauce

Instructions
- Make the chimichurri by mixing cilantro, garlic, red wine vinegar, lime juice, olive oil, smoked paprika, red pepper flakes, and salt in a bowl.
- Marinate the chicken thighs in half of the chimichurri sauce for at least 30 minutes.
- Preheat the grill to medium heat (325°F-350°F) and grill the chicken thighs for 4-5 minutes on each side until they reach an internal temperature of 165°F.
- Let the chicken rest for 5 minutes before serving with the remaining chimichurri sauce.
