Instructions
- Preheat the grill to medium-high heat.
- Pound the chicken breasts to an even thickness and brush both sides with olive oil.
- Mix the cumin, coriander, salt, and pepper, then sprinkle this spice mixture on both sides of the chicken.
- Grill the chicken until it reaches an internal temperature of 165°F, about 4 minutes per side.
- For the chimichurri sauce, pulse the red onion, garlic, red wine vinegar, lemon juice, and salt in a food processor until minced.
- Add the parsley, cilantro, oregano, and red pepper flakes, then slowly pour in the olive oil while pulsing until combined.
- Transfer the chimichurri sauce to a bowl and chill until ready to serve.
- Serve the grilled chicken warm with chimichurri sauce on top.
