Grilled Chimichurri Chicken

Ingredients

The chicken

  • 5 pieces boneless, skinless chicken breasts
  • 1 ¼ tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • 1 Tbsp olive oil

The chimichurri sauce

  • ¼ cup chopped red onion
  • 3 cloves garlic
  • 3 Tbsp red wine vinegar
  • 2 Tbsp fresh lemon juice
  • 1 tsp salt
  • 1 ½ cups packed fresh parsley
  • ½ cup packed fresh cilantro
  • 3 Tbsp packed fresh oregano
  • ¼ tsp red pepper flakes (optional)
  • ¾ cup olive oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. Pound the chicken breasts to an even thickness and brush both sides with olive oil.
  3. Mix the cumin, coriander, salt, and pepper, then sprinkle this spice mixture on both sides of the chicken.
  4. Grill the chicken until it reaches an internal temperature of 165°F, about 4 minutes per side.
  5. For the chimichurri sauce, pulse the red onion, garlic, red wine vinegar, lemon juice, and salt in a food processor until minced.
  6. Add the parsley, cilantro, oregano, and red pepper flakes, then slowly pour in the olive oil while pulsing until combined.
  7. Transfer the chimichurri sauce to a bowl and chill until ready to serve.
  8. Serve the grilled chicken warm with chimichurri sauce on top.
