Ingredients

The chicken

  • 2 lbs chicken legs
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper

The chimichurri sauce

  • 1 clove garlic
  • 1 teaspoon red pepper flakes
  • ¾ cup fresh cilantro
  • ¼ cup fresh oregano
  • 1 unit lime (juice of one)
  • 2 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the grill to medium-high heat (about 400 degrees).
  2. Mix garlic powder, cumin, coriander, smoked paprika, sea salt, and black pepper in a small bowl.
  3. Rub the spice blend all over the chicken legs.
  4. Grill the chicken for 2-3 minutes on each side over medium-high heat.
  5. Reduce the heat to medium-low and cook the chicken for an additional 20 minutes or until the internal temperature reaches 175 degrees.
  6. In a food processor, blend garlic, cilantro, oregano, lime juice, red wine vinegar, olive oil, salt, and pepper until smooth.
  7. Serve the grilled chicken topped with chimichurri sauce.
