Ingredients

Marinade

  • ½ cup red onion, coarsely chopped
  • ½ cup water
  • ¼ cup olive oil or neutral flavored oil
  • 2 tablespoons ancho chile powder
  • 1 tablespoon garlic, chopped
  • 2 tablespoons adobo sauce from chipotle peppers
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • teaspoons ground cumin

Chicken

  • pounds boneless skinless chicken thighs

Instructions

  1. Blend the marinade ingredients until mostly smooth.
  2. Pour the marinade into a bowl or resealable bag and add the chicken, coating it well.
  3. Refrigerate the chicken for at least 1 hour, up to 12 hours.
  4. Remove the chicken from the marinade and heat a grill or preheat the oven to 400°F.
  5. Grill the chicken for 7-8 minutes per side or bake for 20-25 minutes until cooked through.
  6. Let the chicken rest for 5 minutes, then cut into slices or cubes and serve.
