Chipotle Chicken

Ingredients

The marinade

  • 12 ounce bottle chili sauce
  • 1 to 2 tablespoons chopped chipotle peppers in adobo sauce
  • ¼ cup fresh lime juice
  • cup molasses
  • 1 tablespoon brown sugar
  • ½ cup red wine or rice vinegar

The chicken

  • 2 pounds boneless skinless chicken breasts

Instructions

  1. Blend the marinade ingredients until smooth.
  2. Marinate the chicken in a ziplock bag with some of the marinade for at least 30 minutes.
  3. Simmer the remaining marinade in a saucepan for 4-5 minutes.
  4. Grill the chicken on medium-high heat for 4-5 minutes per side until cooked through.
  5. Let the chicken rest for 5-7 minutes before slicing.
  6. Alternatively, broil the chicken in the oven for 3-4 minutes per side.
