Chipotle Chicken

The marinade

red wine or rice vinegar
The chicken

boneless skinless chicken breasts
Instructions
- Blend the marinade ingredients until smooth.
- Marinate the chicken in a ziplock bag with some of the marinade for at least 30 minutes.
- Simmer the remaining marinade in a saucepan for 4-5 minutes.
- Grill the chicken on medium-high heat for 4-5 minutes per side until cooked through.
- Let the chicken rest for 5-7 minutes before slicing.
- Alternatively, broil the chicken in the oven for 3-4 minutes per side.
